What's Cooking

Here's another delicious one from Vegan Planet...I'm telling you, this is a really great cookbook - you gotta get it! TONS of wonderful recipes! My Love made these for a couple dinners this week and I baked some vegan flax cornbread to go with it last night...added some organic avocado on the side and it was a delicious meal!


Black Bean & Sweet Potato Enchiladas - Serves 8

(2) Large - Sweet Potatoes - peeled and diced
(1) T - Olive Oil
(1) large - Garlic Clove, minced
(1) Small - Hot Chile, seeded and minced
(1.5) C - Black Beans cooked or (1) 15-oz. can, drained and rinsed
(1) 14.5-oz can - Diced Tomatoes (used jarred tomato sauce instead, but fresh diced would be good too)
(1) T - Chili Powder
(2) C - Salsa (make your own or buy favorite jarred)
(8) Large - Whole Wheat Tortillas
(1/4) C - Onion, finely chopped

1.) Preheat oven to 400. Arrange Sweet P's in single layer on lightly oiled baking sheet and roast until tender - about 20 mins. Turn once during roasting. Remove from oven and set aside.
2.) Reduce oven temp to 350. Heat Olive Oil in large skillet over medium heat. Add garlic and chile, and cook, stirring, until fragrant, about 30 seconds. Add beans, tomatoes, chili powder, and S&P to taste. Stir in Sweet P's and simmer for 5 mins.
3.) Spread thin layer of salsa over bottom of lightly oiled 9 x 13-in. baking dish.
4.) Place a tortilla on a flat work surface. Spoon a portion of Sweet P mixture down center of tortilla and roll it up - place in baking dish seam side down. Repeat with remaining tortillas and Sweet P mixture. Spoon any remaining Sweet P mixture over top of enchiladas, as well as any leftover salsa.
5.) Sprinkle with chopped onion - cover and bake until hot and bubbly, about 20 mins.

This filling would also be yummy just wrapped up in warmed tortillas as fajitas or you could even do an enchilada casserole instead of rolled up enchiladas, as well as many other variations. Next time, I think we might add some peas, corn, and maybe some bell peppers to get some more veggies in there. But, it was quite enjoyable and according to our nest's Top Chef "very easy"...
