This week's meals


I hope everyone's week is going well! The weather has been really lovely for us and the time we have been able to spend outdoors has been most enjoyable. It's been an incredible food week too! My Love really outdid himself with a delicious lunch and dinner menu and I am SO in love with my lunch shown above. It's raw pecan "meat" with pico on romaine tacos served with carrots on the side. YUM!!! It's so so so good and all raw, which is a big goal for us in 2010. FYI, the tacos are inspired by Sara's walnut taco salad.

Lately, we've been eating raw throughout the day and then doing a cooked dinner, and it's been great so far. I gave up caffeine too so it's been different, but I feel really good and know it was something I definitely needed to do for the continual improvement of my health. Anyway, our cooked dinner this week has been roasted eggplant paninis on sprouted bread with basil, red onion, and mustard, with a side of roasted potato fries. See, I told you he outdid himself! It's so very delicious and I look forward to dinners every single day. My breakfasts have been sprouted raw buchwheat groats with homemade raw almond or pecan butter and a banana - YUM! I've been learning about and doing more soaking, sprouting, and other raw techniques which maybe someday soon I'll go more into. I'm really excited about this new mostly-raw road for 2010 and the good that will come of it...

Well I have been eating lots of vegan yummies this week, as always. I gave up caffeine about a year ago when I found out I was pregnant and I don't think I will ever go back. It's really nice not to rely on it to jump start my days!

Hey there! This is my first time posting on your blog, which I was thrilled to find a little while back. My husband and I are also vegan, mostly raw and always organic. I love knowing that there are others out there on the journey to great health...living on the best food ever! Tonight our dinner was avocado, sprouts, kale, cucumbers and portabellas with a little lime, coconut oil and sea salt, in toasted Nori sheets, with a little broccoli and radish on the side...so delicious! I hope you and your hubby enjoy the RAW journey...it is pure bliss with astounding health benefits :) Have you read books by David Wolfe? A great one is 'Eating for Beauty' (I know, sounds shallow, but it is about true beauty inside and out through nutrition) it is incredibly well written and so informative. Also, The film 'Food Matters' is one the best I have seen...if you get a chance, certainly check it out. Anyhoo, Cheers to living the kindest, healthiest lives possible!

Yum! I love all the recipes you share. They are always so delicious! Great job with the caffeine thing. Something I 'know' I need to work on, but not quite ready to tackle yet. Hope you have a great weekend!

That lunch looks delicious! And your menu is inspiring! We strive to eat healthful, nutritious meals every day...but I'd like to be even more committed to eating raw foods.
